Hold the knife with your forefinger on the back of the knife, and place the knife blade perpendicularly into groove No. 1 (white wheel) and move blade back and forth with slight pressure 7-8 times, or as necessary. No heavy pressure is necessary. Place the knife perpendicularly into groove No. 2 (pink wheel) and, again, move the blade back and forth with slight pressure 7-8 times. When sharpening is completed, hand wash knife in hot water and carefully dry with a cloth or towel before use. Also rinse the sharpener with water after each use by removing the cover. *This ceramic water sharpener is recommended for all Global knives except the G-11, G-7, and GS-4. These knives have the Japanese style one-sided cutting edges which should be sharpened with a waterstone or ceramic whetstone.|
