The Chroma Haiku Damascus Carving Knife is ideal for slicing thin cuts of meat, poultry, roasts, hams, and other large cooked meats. A carving knife is much thinner than a chef's knife, enabling it to carve thinner, more precise slices. The sharp blade is constructed of a 32-layer Damascus VG-10 core high-carbon stainless steel with a 59-60 Rockwell hardness. Made with ancient Samurai-sword crafting techniques, the blades are sharpened, polished, and mounted with a Japanese cherry wood handle. Hand washing recommended with warm soapy water.
