The Type 301 Japanese steel knives (designed by F.A. Porsche) feature ergonomic 18/10 stainless steel handles and pure Japanese steel blades.  A metal pearl on each knife demarcates transition between handle and blade, for better control when cutting.  The seamless transition between blade and handle gives these stainless knives a modern, professional look.  A special grinding method is used when making the kitchen knives, so they stay sharp longer and are easier to sharpen.  Ideally, the knives should be sharpened daily (for professional cooks) or about every six months (for hobby cooks), and by the same person each time. Each knife sold separately.  2-Piece carving set includes the 8" carving knife and carving fork.  Type 301 knife block with 8 slots and matching knife carrying case also available separately.
