Love Epicurean despite a couple of flaws

First, I'll say I love Epicurean stuff, it looks good, it's easy on knives, and so far everything has been great. For reference I have two Epicurean cutting boards, a scraper, and pizza cutter. Now to the review: Epicurean stuff stinks. The composite construction has an industrial smell to it, some say it resembles formaldehyde. It lessens with a couple of washings, but my sensitive nose can still smell it every time I wash my epicurean products. The second flaw is that it's rated for 350 degrees. Who cooks pizza at 350 degrees? I cook my pizzas at a very high 525 degrees. So far there hasn't been any problem using the peel, but I am guessing if I was slow that I'd start burning or melting the peel. That being said, wood or bamboo probably couldn't handle much dilly dallying either. Aluminum sticks. So we'll see how this works.
