The Shinkansen ceramic water sharpener is very fast and safe to use. The Mino Sharp Plus is a universal sharpener sutitable for all knives, except those that are serrated or sharpened onone side only.The sharpener has 2 ceramic wheels; the white one is coarse while the pink completes the medium sharpening process. Because the ceramic wheels are not parallel to the sharpening groove, the angle at which the blade is sharpened will restore the razor sharpness of the knife.To use: Pour water into the sharpener. When water is in the wheel compartment the revolving ceramic whetstone is constantly being rinsed. The sharpener should always be rinsed with water after use by removing the cover. Firmly place sharpener on countertop and firmly grip handle with one hand. Hold the knife with your forefinger on the back of the knife, and place the knife blade perpendicularly into groove No. 1 (white wheel) and move blade back and forth with slight pressure 7-8 times, or as necessary. No heavy pressure is necessary. Place the knife perpendicularly into groove No. 2 (pink wheel) and, again, move the blade back and forth with slight pressure 7-8 times. When sharpening is completed, hand wash knife in hot water and carefully dry with a cloth or towel before use. Also rinse the sharpener with water after each use by removing the cover. *This ceramic water sharpener is recommended for all Global knives except the G-11, G-7, and GS-4. These knives have the Japanese style one-sided cutting edges which should be sharpened with a waterstone or ceramic whetstone.
