M'hamsa, or couscous, is a Mediterranean staple food enjoyed all around the region of the Maghreb. Mahjoub's hand-rolled couscous varies in size slightly because of its unique production and is most similar to medium-sized Moroccan couscous. The production is done the same way it was done centuries ago by the Berbers, the original inhabitants of the mountainous area.
